The aroma hit me before the door did. Pork bones simmered for hours, filling the air with the rich scent of tonkotsu broth , the kind of aroma that lingers in your jacket long after you leave. I hadn't even sat down yet, and my stomach had already made up its mind. I visited Ramen Keisuke Tonkotsu King Four Seasons on a Tuesday around 7pm, half expecting a quiet weeknight. I was wrong. There was a queue, maybe eight people deep, all of us standing in that patient hush you only see at ramen restaurants where the food is worth the wait.
